Chocolate Mint Cupcakes

Ingredients:

2 cups flour
1 t baking soda
pinch salt
½ cup cocoa powder
10 T unsalted butter, softened
1 2/3 cups sugar
3 eggs
1 t peppermint extract
1 cup milk

Procedure:

Preheat oven to 350.

Mix dry ingredients.

In another bowl, beat butter and sugar for 3-5 minutes, until light and creamy. Beat in eggs, one at a time, then the peppermint extract.

On low speed, beat in dry mixture alternating with milk until just blended.

Pour batter into cupcake pan and bake 12-15 minutes.

Frost if desired.
