Garlic Chicken Quinoa Stir Fry

Ingredients:
1 cup Quinoa
2 cups chicken broth
1 ½ lbs chicken breasts
1 onion, minced
1 red bell pepper, minced
2 large carrots, minced
5 cloves garlic, minced
20 leaves fresh sweet basil, julienne
Parmesan cheese
salt and pepper
Cut chicken into one-inch pieces. Heat a small amount of oil in a large skillet and saute chicken for 5 minutes or until golden brown. Add onions and pepper and saute for one or two more minutes. Add garlic and saute until peppers become slightly limp, about one to two minutes. Season with salt and pepper. Remove from heat and add the basil and quinoa. Toss until basil wilts. Garnish with Parmesan cheese.
